SOFI TUKKER and Dr. Maria Ortiz: The Science of Bread

Global dance music stars SOFI TUKKER celebrate the release of their new album Bread in a chat about the beloved food staple and the chemistry that makes it so delicious with food scientist, Dr. Maria Ortiz. Dr Ortiz runs the popular Instagram page "All You Knead Is Bread" where she illustrates the fascinating science behind bread chemistry and her delectable sourdough recipes. This conversation will be recorded for the Sing For Science podcast and moderated by its host, Matt Whyte.

SOFI TUKKER, the GRAMMY-nominated, genre-defying duo comprised of Sophie Hawley-Weld and Tucker Halpern, have released their new third studio album BREAD, their most daring, innovative and infectious body of work to date. In addition to being a symbol of abundance, energy, sensuality and community, BREAD is an acronym for "Be Really Energetic And Dance." It's an invitation for a shared experience to "break bread" through musical connection. Blending house, Brazilian funk, drum and bass, bossa nova, pop, Portuguese poetry, and, most crucially-fun, BREAD features special guests Kah-Lo, MC Bola and Channel Tres.

Offering an inclusive and global perspective on electronic music, SOFI TUKKER has amassed over three billion streams, and Platinum and Gold records on five continents. Their discography includes the EP's Soft Animals and Dancing on the People, three studio albums, Treehouse, WET TENNIS and BREAD, and an array of singles released in 2023, all spreading themes of liberation, unity, and self-empowerment. The band lit up festival stages in 2023 with appearances at Coachella, Governor's Ball, Lollapalooza and Bonnaroo among others.

Sharing a mutual love of fashion, SOFI TUKKER launched their own clothing imprint WET TENNIS and were the face of G-STAR RAW's colorful denim campaign. Dedicated activists, they've worked with multiple organizations over the years including Planned Parenthood, The Trevor Project, National Alliance on Mental Illness, Natural Resources Defense Council, The Nature Conservancy, the March for Our Lives and the Red Cross, among others.

Dr. Maria Ortiz is a Postdoctoral Research Associate at the Functional Food Lab of North Carolina A&T State University, specializing in the development of healthy, high-fiber bakery products. Originally from Spain, she earned her B.S. and M.S. in Chemical Engineering from the University of Santiago de Compostela. In 2014, Dr. Ortiz began her Ph.D. in Applied Science and Technology at North Carolina A&T, where her dissertation.
